The Producer — Edinson Argote's path to coffee wasn't straightforward. Orphaned at three and raised by his sister, he left home at eleven, served in the Colombian army, and found his calling at a coffee buying station in Acevedo, Huila. He pursued it relentlessly, rising to head of quality and processing control across some of Colombia's most innovative farms in Cauca.
He joined forces with his partner Luz Angela to establish Quebraditas Coffee Farm in Oporapa, Huila in late 2023. Sitting at 1,850 metres, it's already making waves in the specialty coffee world.
A farm barely three years old, with the kind of pedigree that takes most producers a lifetime to build.
Process — Thermal Shock Washed. Cherries are harvested at a minimum 90% ripeness and floated to remove defects, before 24 hours of oxidation in food-grade drums. The coffee is then dry pulped and fermented for 30 hours to remove mucilage, before being washed at 50°C to create a thermal shock. A second fermentation follows — 65 hours at below 25°C with specific yeast strains — sealed with a final 5°C wash to lock everything in. The coffee is then dried mechanically for 48 hours at 38°C.
