The Region - Grown across 24 vibrant communities in the VI Frailesca region and the Sierra Mariscal, nestled within the majestic Sierra Madre de Chiapas, this decaffeinated coffee is a true testament to the harmony between nature and tradition. Cultivated at elevations of 1,200 to 1,800 meters, the farms thrive under the unique microclimates of the El Triunfo Biosphere Reserve, where lush polycultures foster biodiversity and sustain local livelihoods.
The Process - Decaffeinated using the innovative Mountain Water Process, developed by Descamex in Córdoba, Veracruz, this coffee undergoes a chemical-free caffeine removal process. Using pure water from Pico de Orizaba, this method ensures up to 99% of the caffeine is removed while preserving the vibrant flavour and aroma that make this coffee exceptional.
